Yard long bean is a legume, grown for its edible green pods. As its name suggest, the bean is slender and can be 30-60cm long. It is usually harvested whilst still immature so the seeds inside remain soft. Long yard bean is very easy to cook and extremely versatile. It can be eaten raw, blanched, boiled, stir-fried, or added to curries. In Thailand, long yard beans are often serve raw on the side to complement dish suches as Som Tam (Papaya Salad), Laab (Spicy meat salad), or eaten together with chilli paste.
