Dok Kae is an edible flower that are often steamed and eaten with chilli paste, or added to a sour spicy curry called Gang Som Dok Kae. The flower add a slight bitterness and astringency to the dish. When cooking, it is best to remove the pistils encased inside the flower as they are very bitter. If making a curry dish, simply add Dok Kae at the very last moment.
