Eggplant green, also called Makhuea Pro, is an essential ingredient in many Thai dishes including green curry, red curry, and Kaeng Tai Pla. They are ofter halved or quartered and cooked in the curry where they soak up the rich sauce and become more tender. Eggplant green can also be eaten raw or steamed and dipped in chilli paste called Nam Phrik. This variety of eggplant is usually 1.5-2 inches in diameter and weighs 40-80g per piece.
